For this month's Hyde Park Wine Society at the Promontory we're celebrating Beaujolais & Harvest with a four-course meal from Executive Chef Bernard Bennett and wine pairings by 57th Street Wines Sommelier Derrick Westbrook.
Beaujolais & Harvest is about the prized, elegant wines of Beaujolais paired with seasonal foods from our region, inspired by the hearty cuisine of France's eastern hills and brought to you from our hearth.
Tarte à l'oignon caramélisé et au Roquefort
Caramelized onion and Roquefort tart with plum jam and salad of zucchini ribbons, Bresaola, and toasted almonds
Poitrine de porc croustillante
Crispy pork belly, celery root mash, demi-spheres, hearth-roasted gruyere apples
Lamb three ways with seasonal vegetables, black truffle powder, fried rosemary
Éclairs de bleuets violets
Eclairs with hearth-roasted blueberries, violet crème and served with apricot sorbet
